Breakfast Sandwich
On Sunday mornings my kids eat a huge breakfast. Maybe it’s all those hours of sleep that turn them into hungry monsters when they wake up. Whatever it is I have no idea how they can handle so much food.
One weekend my brother came over and brought them McDonald’s. Like every red-blooded American child the kids went nuts for it. The problem is, I don’t let them eat fast food. So once they were hooked, well they wanted English Muffin breakfast sandwiches on the regular. Luckily I always have tons of breakfast ingredients in the house so my own version of a English Muffin breakfast sandwich was easy to put together. No drive through necessary.
ingredients:
English Muffin, lightly toasted
1 egg, scrambled
1 Tablespoon Jack Cheese, shredded
1 Tablespoon Cheddar Cheese, shredded
2 pieces of bacon, crisp
Obviously this is not a recipe, just an assembly with a few notes.
I like the muffin slightly toasted just to give it a little crispness.
One egg is more than enough.
The two cheeses add a whole lot of savory.
Bacon should always be super crisp and not at all floppy.
I like a side of hash browns and a whole lot of fruit. Breakfast is served.
