Broken Lasagna

Sometimes grocery baggers get over eager. I’m talking to you, dude who put my eggs on the BOTTOM of all my groceries. Sigh. But I came up with a good fix, not for the broken eggs, but for broken lasagna noodles which were surreptitiously crushed within an inch of their life.

So when you get home and your lasagna noodles are shattered into a million pieces, don’t fret. Dinner can still be saved, just assemble as planned. Just think of it as a giant puzzle piece, but more delicious.

Broken Lasagna

Ingredients:

1 box no-boil lasagna noodles
1 pound ground beef
1/2 pound ground pork
1/2 cup onion
1 clove garlic
1 (28 ounce) can tomatoes, diced
1 (14 oz) can tomato sauce
1 Tablespoon tomato paste
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon oregano
1/4 teaspoon onion powder
1 (15 oz) container ricotta cheese
2 cups mozzarella cheese, shredded
2 eggs
salt
pepper
1 cup mozzarella cheese, shredded
1 cup parmesan cheese, shredded

Instructions:

In a pan over medium high heat saute the onion, then add the ground beef, ground pork and the garlic, until browned. Add the tomatoes, tomato sauce and tomato paste. Season with the salt, pepper, oregano and onion powder. Simmer for 20 minutes, set aside.

In a small bowl combine the ricotta cheese, 2 cups mozzarella cheese and the eggs. Season with salt and pepper. Set aside.

Preheat the oven to 350 degrees. Prep a 9×13 inch pan by greasing it with olive oil.

On the bottom layer, spread about 1-1/2 cups of tomato meat sauce. On top of that place one layer of broken noodles, 1/3 ricotta cheese mixture, and then half of the ground beef mixture. On top of that sprinkle 1 cup of mozzarella cheese.

Next layer: broken lasagna noodles, 1/3 of ricotta mixture, another 1 cup of sauce.

Third Layer: another layer of broken noodles, the rest of the ricotta cheese mixture, and the rest of the meat mixture.

Final layer: The last of the broken noodles, 1 cup of sauce, and then sprinkle 1 cup of parmesan cheese.

Cover the pan with foil and place it on a baking sheet in case it bubbles over. Bake for 50 minutes, uncover and cook for another 5 minutes.

Let cool slightly, then serve.
