Brownie Ice Cream Musubi
I like everything measured. Everything perfect. It’s the architect in me.
So, why not use a musubi maker…for ice cream sandwiches?!? Perfection never tasted so good.
ingredients:
brownies (this brownie recipe freezes fantastically)
ice cream (this is my go-to homemade recipe)
acrylic musubi maker (it’s a must!)
First make the brownies, but instead of a pan or even cupcake cups, prep a baking sheet with buttered parchment and pour the batter down. Spread it evenly so you get a thin layer. Let the brownies cool on a wire rack.
Get our your musubi maker. Once cooled, use the base of maker as a template to cut out the rectangles for the brownies.
Then, to make the ice cream sandwich, put a brownie on the bottom layer, spoon ice cream on top, then press. You will need to be quick about this as the ice cream will start melting and stick a little.
Layer another brownie on top, using the press again, push down, then gently remove the bottom part of the maker, to get a nicely packed sandwich.
I like to wrap these tight in plastic wrap and put them back in the freezer. It allows the ice cream to harden a bit, and helps the sandwiches to keep their shape.
When you are ready to serve them just take them out of the freezer and unwrap!
You’ll never look at musubi the same again.
