Brownie Ice Cream Sandwiches
Two in one desserts are my thing. Why eat one when you can have two! These brownie ice cream sandwiches are great for hot weather, a tasty baked good sandwiched with cold ice cream is the ideal summertime treat.
This homemade brownie makes all the difference, and you can fill the center with any flavor ice cream of your choosing. This side by side Neapolitan treat is a fun twist to a traditional treat.
Brownie Ice Cream Sandwiches
Ingredients:
3/4 cup all-purpose flour
2 Tablespoons cocoa powder
pinch of salt
1/2 cup unsalted butter
1-1/4 cups sugar
3 large eggs
4 oz chocolate, melted
1 teaspoon vanilla
1/2 gallon vanilla ice cream, softened
1/2 gallon strawberry ice cream, softened
Instructions:
Preheat oven to 350 degrees. Prep a baking sheet with buttered parchment.
In a bowl, whisk flour, cocoa powder, and salt.
In the bowl of an electric mixer, cream the butter and sugar.
Add the eggs, one at a time, then add the cooled chocolate and vanilla.
Stir in the dry ingredients until just combined.
Pour the batter onto the prepped parchment lined baking sheet. Bake for 15 minutes, or until a toothpick in the center comes out clean. Let cool completely.
Turn the brownie out of the pan, peeling off the parchment. Place back into the baking sheet, and freeze until firm.
Line a separate baking sheet with wax paper. Spread the softened vanilla on one side of the pan and the strawberry ice cream on the other side. Freeze until firm.
Remove both the ice cream and the brownie from the freezer. Turn the brownie on the prepped ice cream and peel off the wax paper.
Cut the brownie in half down the middle, and fold onto the other half to make a giant sandwich. Cut into squares to serve.
