C-3PO Ice Cream Sandwich (lemon cookie+vanilla ice cream)

Cookies are wonderful but you know what’s even better? Making a whole new dessert out of them, especially when it’s Star Wars themed. Let’s hear it for double dessert!

These are the cookies you’re looking for. A crunchy lemon sugar cookie with homemade vanilla ice cream sandwiched in between. These ice cream sandwiches will aid in any human-cyborg relations.

ingredients:
3 cups flour
1 teaspoon baking powder
zest of one lemon
pinch of salt
2 Tablespoons lemon juice
1 cup (2 sticks) butter, softened
1 cup sugar
1 egg

yellow sanding sugar
vanilla ice cream

In a medium bowl whisk together the flour, baking powder, lemon zest and salt.

In the bowl of an electric mixer beat the butter and sugar until combined. Add the lemon juice and egg.

Slowly add in the flour mixture until it is incorporated. The dough will form quickly, and when it starts to pull away from the bowl, it’s done!

Split the dough into two and wrap in plastic wrap. Chill until you are ready to use.

Preheat your oven to 350 degrees. Prep baking sheets with silpats.

Start rolling out the dough. I use powdered sugar instead of flour so it doesn’t get that dough-y taste and the sugar adds a slight sweetness. Roll the dough to about 1/4 inch thick.

I’ll admit, I’m always looking for new ways to use my themed cookie cutters from Williams Sonoma. They always turn out the best imprinted cookies!

Spread the yellow sanding sugar all over the rolled out dough, then using the C-3P0 cutter cut out the cookies.

Place them on the silpat sheets and bake for 8-10 minutes depending on your oven. Let cool on a wire rack.

Once cooled, sandwich the vanilla ice cream between two cookies and serve.
