Captain America Red White and Blue Cupcakes
This Friday is the release of Captain America: The Winter Soldier and those who have already seen them movie say it’s the best in the Marvel series! I’m excited to see the continuation of the Captain America story and where it takes us in the Marvel cinematic universe!
Inspired by Cap’s shield and all-American colors I decided to make red, white and blue cupcakes…CAPcakes! Frosted with vanilla buttercream and sprinkled with edible gold stars, one bite and you’re sure to become the next super-soldier!
Captain America Red White and Blue Cupcakes
Ingredients:
cupcake ingredients:
2-1/4 cups cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup (1-1/2 sticks) unsalted butter
1-3/4 cups sugar
3 eggs
1 cup buttermilk
1 Tablespoon vanilla
frosting ingredients:
1/2 cup (1 stick) unsalted butter, softened
3 cups powdered sugar
pinch of salt
1 teaspoon vanilla
3 Tablespoons milk (as needed)
red food gel dye
blue food gel dye
edible glitter stars
heart sprinkles
Instructions:
Preheat the oven to 350 degrees. Prep a cupcake pan with liners.
In a medium bowl, whisk the cake flour, baking powder, baking soda and salt. Set aside.
Cream the butter and sugar until fluffy. Add the eggs one at a time until incorporated, then add the vanilla.
Alternate the buttermilk and the dry ingredients until combined.
Once the batter has come together, separate it evenly into 3 bowls.
I like to use gel food coloring because you don’t need a lot and it doesn’t change the taste or texture of the cake. Leave one bowl plain white. To the second bowl add the blue food gel dye and stir until combined. To the third bowl add the red food gel dye and stir that until combined.
To the liners add a heaping Tablespoon of the red batter, followed by a Tablespoon of the white, then topping it off with a Tablespoon of the blue.
Bake for 15 minutes or until done depending on your oven. Let cool on a wire rack.
For the frosting, in a bowl of an electric mixer cream the butter while adding the powered sugar SLOWLY, a little at a time. Add the vanilla, salt and then the milk as needed. Once you get the consistency you want, turn the mixer up to medium high and WHIP it for 10-15 seconds.
Frost the cooled cupcakes and decorate with heart sprinkles and edible gold stars.
