Cherry Pie Filling
Fresh cherries from the Farmer’s Market means one thing, cherry pie! Whether they’re tiny pies on a stick or regular old sweet cherry pie, fresh cherries can make all the difference.
Cherry Pie Filling
Ingredients:
2 cups cherries
1/2 cup sugar
2 TB lemon juice
2 TB cornstarch
1/2 teaspoon almond extract
Instructions:
Over medium-high heat in a large saucepan combine the cherries, sugar and lemon juice. Cook til soft, mashing the cherries, throughout.
Once it starts to get saucy, spoon out some of the liquid into a small bowl and mix into a paste with the cornstarch. Add it back into the pan mixture and stir until thickened.
Stir in the almond extract, then let cool slightly before use.

you always have the cutest kitchen! but i love the recipe – i have seen so many cherries in the market and it’s great to have another way to use them besides just throwing them in your mouth
