Chicken Edamame Meatballs
Ground chicken meatballs are pretty common in Japanese cooking. When the Baby discovered that I’d hidden edamame beans inside the meatballs as a ‘treasure’ his response was “Chicken meatballs, WHAT.” D’oh. It was worth a shot. Let me tell you, the Kid, LOVED them…the Baby, he feels a little betrayed right now. I guess beans aren’t really ‘treasure.’
ingredients:
1 pound ground chicken
1 egg
2 Tablespoons soy sauce
2 Tablespoons sugar
1 Tablespoon mirin
2 Tablespoons cornstarch
3/4 cup panko
1/2 teaspoon black pepper
1 cup edamame beans, shelled
Preheat your oven to 350 degrees. Prep a sheet pan with a wire rack. Set aside.
If your edamame are still in their pods, shell them and place the beans in a small bowl, set aside for later.
In a small bowl combine the soy sauce, sugar, mirin and cornstarch.
Mix together with the ground chicken and the egg.
Add the panko and the black pepper, mixing well with your hands. Form small flat patties in your hand, and place one or two edamame beans in the middle, then seal it up to form a meatball. You shouldn’t see the beans. Shhh.
Bake at 350 degrees for 15 minutes, turn over and then bake for another 10-15 until the meatballs are cooked through.
Even without the edamame these meatballs are a winner!
I’ve been putting cauliflower in the mashed potatoes on the sly. I honestly don’t think they can discern it, but they still refuse to eat them. Go figure. And I’m truly not a fan of the “sneak in veggies” tactic – I want them just to eat the green stuff and like it.
Jami – this reminds me of those Popeye Meatballs….
I like the concept of Japanese flavors mixed into a meatball – and since my kid inhales everything Japanese (well…he actually inhales ALL food placed in front of him) this would be perfect…especially over soba noodles 🙂
@jami I am not a fan of hiding veggies in food, like spinach brownies?? Ew. Come on. But I thought this would be a funny joke-and it was!

My son loved these! I was too chicken(ha) to try the hidden edamame inside…maybe after making these a couple more times I’ll risk it. Thanks for another recipe my son will eat!
