Chicken Taco Soup
Tacos are delicious but when made into a soup the flavors become almost magical. This soup is the cure all, I’m talking if you have a cold, you’re feeling depressed, you need some extra TLC, this soup will do it for you guaranteed.
It’s super simple because you can use pre-cooked roast chicken, simply throw the ingredients together from your pantry and dinner is ready as fast as you can boil water. When you don’t know what to make for dinner, Chicken Taco Soup will become your weekly go-to meal!
Chicken Taco Soup
Ingredients:
1 Tablespoon olive oil
1 small onion, diced
3 (14 ounce) cans chicken broth
1-1/2 teaspoons ground cumin
1-1/2 teaspoons chili powder
1 teaspoon garlic powder
2 cups roast chicken, cooked and diced
1 cup corn
1 (4 oz) can chopped green chiles
squeeze of half a lime
salt and pepper
Instructions:
In a large pot over medium high heat saute the onion in the olive oil until soft.
Pour in the chicken broth and bring to a boil.
Add the cumin, chili powder and garlic powder.
Then add the roast chicken, corn and green chiles.
Squeeze in the lime juice and season with salt and pepper and serve.
