Chocolate Banana Cupcakes

Here we go again. I’m still no banana fan but I am always trying to come up with ways to use them in my recipes. Bananas are rich in nutrients and my kids love them! Chocolate and banana go together like…Bert and Ernie? Whatever, it’s an flavor combo fave and boosts any cupcake to the next level, especially when topped with a rich ganache!

ingredients:
1-1/2 cups all-purpose flour
1/4 cup cocoa powder
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1/2 cup (1 stick) butter, melted
3 mashed bananas
2 large eggs
1 teaspoon vanilla

ganache ingredients:
6 ounces semi sweet chocolate chips
2/3 cup heavy cream
1 teaspoon vanilla

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda and salt. Set aside.

In a separate bowl, mix together the butter, mashed bananas, eggs and vanilla. Add the flour mixture a little at a time – make sure you don’t overmix!

Spoon the batter into the liners. Bake 14-16 minutes depending on your oven. Let cool on a wire rack.

While the cupcakes are cooling, start the ganache. In a saucepan over low-medium heat – melt the chocolate, heavy cream and vanilla. Keep and eye on it, and as it starts to melt, stir and stir some more. Keep stirring until you get a nice glossy ganache. Set aside to cool off just for a few minutes, so it will thicken.

Spoon the ganache on top of the cooled cupcakes and top with a banana chip to serve!

    Might I suggest Banana — and Peanut Butter?

    My kids grew up on PB on a flour tortilla wraped around a banana for lunches and snacks. Probably because I craved them while pregnant! And I still do 🙂

  2. They look delicious. I was wondering where you buy your Valrhona cocoa powder? Do you order it online? I haven’t seen it in stores here.

    @Tara I buy my cocoa powder from a local kitchen supply store.

    I made my first attempt ever with your recipe, but they came out a bit “bouncy”. They were pretty tasty, though. Any ideas why they came out that way?Thank you, and by the way, your cupcakes look amazing!!
