Chocolate Chip Granola Cookies
I have a crazed obsession with granola lately, I can’t stop eating it. I have six bags of it right now and realized no human can eat this much granola so I must figure out a way to use it – cookies was the first thing that popped into my mind.
The granola adds a nice crunch to the cookie, almost like an oatmeal but with more texture and flavor! They’re so good – it’s certainly not helping my obsession…
ingredients:
2 cups all-purpose flour
1 cup granola
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup (2 sticks) butter, softened
1 cup brown sugar
1/2 cup white sugar
2 teaspoons vanilla
2 eggs
8 ounces chocolate chips
Preheat the oven to 350 degrees and line baking sheets with silpats.
In a large bowl whisk together the flour, granola, baking soda and salt. Set aside.
In the bowl of an electric mixer cream the butter, brown sugar and white sugar. Add the vanilla and the eggs until combined.
Spoon in the flour until the dough comes together.
Fold in the chocolate chips by hand, so that the chips are incorporated throughout the mixture.
Form the dough into small balls, a little over a Tablepoon, and place them on the prepped sheets 2 inches apart. You will get about 4 dozen cookies depending on the size you make them.
Bake for 10 minutes until browned – depending on your oven, and let cool on a wire rack.
These are SUPER delicious. The perfect amount of chewiness, except I accidentally made this with straight up oats instead of granola. For some reason rolled oats = granola to me. Whoops!
