Chocolate Chip Soda Bread
While quarantine has brought out the baker in people, bread can still be an intimidating task. Even though I bake all the time sometimes I just don’t want to fool with yeast, especially when the kids are hungry. That’s where quick breads and soda breads come in.
Soda breads aren’t made with canned soda if that’s what you’re thinking, no they’re made with baking soda which is the best leavening agent because–yay no yeast! Just mix, shape, bake, and move on with your life, aka a baking dream.
When does a bread become a cake? Maybe when you add some sugary goodness, but that’s a whole other subject. Regardless, I studded this soda bread with chocolate chips for added sweetness and so the kids can just grab a hunk for breakfast and go!
Chocolate Chip Soda Bread
Ingredients:
4 cups all-purpose flour
3 tablespoons sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1-3/4 cup buttermilk, plus more for brushing
1/2 cup (1 stick) unsalted butter, melted
1 egg
1-1/2 cups chocolate chips
Instructions:
Step 1: Preheat the oven to 375 degrees. Prep a baking sheet with parchment or a silpat.
Step 2: In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
Step 3: Make a well in the center of the dry ingredients and stir in the buttermilk, melted butter, and egg, until just combined.
Step 4: Fold in the chocolate chips.
Step 5: Form the dough into a round and place on the prepped baking sheet, flattening slightly. Use a sharp knife to make two perpendicular cuts, almost all the way through.
Step 6: Brush the top of the dough with more buttermilk.
Step 7: Bake in the oven for 50 minutes, or until cooked through.
Step 8: Let cool slightly or eat warm.
