Chocolate Chip Vanilla Pudding Cookies
This may be a recipe for cookies but it brings back a very special memory of when my friends Nanette, Jodi, and I visited the set of The Office. The series is a cult classic and who knew Dunder Mifflin was actually a warehouse in the Valley?
We got a full tour of the set and it felt like you were right in the middle of it all. Not only did we meet the cast and crew, but we sat in Dwight and Jim’s chairs — and most important — sit at Pam’s desk!
When we visited the set, I remember Nanette bringing along fresh baked cookies. They were soft, almost cake-like, chocolate chip cookies. I wondered how she got that texture and she said the secret ingredient was a box of pudding! The cast and crew ate them up, and Mindy Kaling was a big fan.
For some reason I’ve never asked Nanette for the recipe, but I’ve always wanted to create my own version of those cookies. It’s years later now and the show has changed and we’ve changed, and instead of being a down the freeway, Nanette is moving far away to another state.
I finally perfected those cookies and it will always remind me of that trip to Dunder Mifflin. To great cookies, great friends, and Nanette’s great new life.

Chocolate Chip Vanilla Pudding Cookies
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
Pinch of salt
1 small box (3 oz) vanilla pudding
1 cup (2 sticks) unsalted butter
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla
12 oz chocolate chips
Instructions:
Step 1: Preheat oven to 350 degrees and prep baking sheets with parchment or silpats.
Step 2: In a bowl whisk together the flour, baking soda, salt and vanilla pudding. Set aside.
Step 3: In the bowl of an electric mixer cream together the butter, brown sugar, and white sugar, until just combined.
Step 4: Stir in the eggs and the vanilla.
Step 5: Add the dry ingredients and stir until the dough is combined. Then fold in the chocolate chips.
Step 6: Form the dough into 2-inch round balls, placing them 3-inches apart on the prepped baking sheet. Approximately 48 in total.
Step 7: Bake for 10-12 minutes depending on your oven. Let cool on wire rack.
This is my go-to cookie recipe. It’s AWESOME. Everyone loves them. I’m going to try chocolate pudding next time.

I’m thinking of changing out the choco chips for the choco covered Craisins I saw on Lick The Bowl Good, and maybe some pistachios for that great holiday feel. Oh thank you for the recipe and the inspiration — I’m so going to blow the socks of the inlaws cookies next year!
This recipe did not work for me. For some reason they durned out flat as a tortilla. I’ve made plenty pudding cookies but this was by far the worst. Perhaps you should check your recipe and see if there’s some info you left out.
