Chocolate Mascarpone frosting
Mascarpone frosting is my most requested when it comes to cupcakes and since it’s so versatile I knew that by adding cocoa it would be just the right compliment to chocolate. This light, airy frosting is like eating a chocolate cloud.
Chocolate Mascarpone frosting
Ingredients:
8 ounces mascarpone cheese
1-1/4 cups powdered sugar
1/4 cup cocoa powder
pinch of salt
1 teaspoon vanilla extract
1 1/2 cups heavy whipping cream
Instructions:
In a medium bowl combine mascarpone cheese, sugar, cocoa powder, salt and vanilla. Stir together until smooth, set aside.
In the bowl of an electric mixer beat whipping cream until stiff peaks form, being careful not to over do it or it will curdle.
Fold the chocolate mascarpone mixture into the whipped cream until combined. Turn it to high just until fluffy, then use immediately or keep in the refrigerator until ready to serve.
Looks absolutely delicious! I would love to try some. Might have to recreate the recipe.

About how many cupcakes will this frost using a piping bag and any guidelines I should follow when adding food coloring
