Chocolate Yogurt Muffins
The kids came up with this one, I told them I had chocolate yogurt and I felt like using it as an ingredient. Since this was their plan I made them do all the work! Ah, child labor.
ingredients:
2 cups all purpose flour
1 cup sugar
2 teaspoons baking powder
pinch of salt
1/2 cup (1 stick) butter, melted
2 eggs
6 ounces chocolate yogurt
1/2 teaspoon vanilla
1/2 cup chocolate chips
Preheat the oven to 350 degrees. Prep a muffin pan with liners.
In a bowl whisk together the flour, sugar, baking powder and salt. Make a well in the dry ingredients and add the melted butter, eggs, chocolate yogurt and vanilla.
Stir together until just combined, then stir in the chocolate chips.
Spoon the batter into the lined pan and bake for 14-16 minutes depending on your oven, until done.
Let cool on a wire rack.
Since you only need one bowl, this recipe is a great way to get kids started in the kitchen!
The only thing missing is an inserted evil laugh!
