Cinnamon Drop Scones
The old saying goes, breakfast is the most important meal of day. I believe that because it jump starts your day and gets you going. Even if you’re on the run, grabbing something to go is always a good idea, but those relaxing mornings—the ones that are few and far between—those are the ones to be savored.
Drop scones are my favorite things to make for breakfast because you can do it in one bowl, they don’t have to be pretty, and they’re always delicious. I’m partial to cinnamon-sugar anything so these scones have that warm feeling of cinnamon toast with the heartiness of good scone. While they look like little rocks after they’re baked, I promise you these are light and fluffy inside.
Serve with tea or coffee for breakfast, afternoon snack, all day everyday. You can’t have enough fresh made scones in your life.
Cinnamon Drop Scones
Ingredients:
2 cups all-purpose flour
1/2 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon cinnamon
pinch of salt
1/2 cup (1 stick) butter, softened
1 egg
1/2 cup milk
1 teaspoon vanilla
glaze ingredients:
1-1/2 cups powdered sugar
1 Tablespoon unsalted butter, melted
1/2 teaspoon vanilla
2-3 Tablespoons whole milk, as needed
Instructions:
Preheat the oven to 400 degrees. Prep a baking sheet with a silpat or parchment.
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
Stir in the butter, egg, milk, and vanilla until combined.
Drop the scones by the spoonful (approximately 2-inches round) onto the prepped sheets.
Bake for 15-18 minutes depending on your oven. Let cool on a wire rack.
In a small bowl whisk together the powdered sugar, melted butter, vanilla, and milk. Add more milk as needed if necessary to get a glaze consistency.
Dip the cooled scones into the glaze. Once the glaze is set the scones are ready to serve.
