Citrus Chicken
I’ve had a deep love of citrus my whole life, I feel like citrus makes everything better. I can eat oranges for days, and always have a lemon on hand. They’re great for baking and even better for adding a little bit of acidity to savory dishes.
This dish came about when I wanted to make a fresh tasting dinner with ingredients I had on hand. Surprisingly there’s no juice in this recipe, the zest does all the work. Slice up the orange and serve it along with the chicken and you’ve got a refreshing weekday dinner ready to go.
Citrus Chicken
Ingredients:
6 chicken thighs
Zest of one lemon
Zest of one orange
2-1/2 Tablespoons olive oil
1 Tablespoon soy sauce
1 Tablespoon honey
1 clove garlic, minced
1 shallot, minced
Salt
Pepper
Instructions:
In a small bowl, stir together the lemon zest, orange zest, olive oil, soy sauce, honey, garlic, and shallot.
Place the chicken in a large freezer bag, along with the marinade. Place the bag into a shallow dish in case of leakage, marinate in the fridge for 2-4 hours.
Preheat the oven to 400 degrees. Place a wire rack onto a parchment or foil lined baking sheet, spray with non-stick spray.
Place the marinated chicken pieces onto the prepped rack, season with salt and pepper.
Bake for 35-40 minutes until chicken is done and juices run clear.
Serve immediately.

i’m going to make this right now… but i don’t see where you added the soy sauce and honey… i’m going to assume it’s to the citrus marinade.

another great easy chicken recipe! Only marinated for 2 hours and had so much flavor.
