Coconut Milk Chicken
No cuts, no butts no…yeah. Some days I just can’t wrap my brain around making dinner. The best thing about crock pots is that you can usually get a few meals out of one dish, remix it up the next day and your family will never know they’re actually eating the same flavors, just in a different way. Way to break the monotony!
While this Coconut Milk Chicken is a healthy meal on it’s own, it also makes a great base for next day tacos, soup or sandwiches. A whole new meal with no effort? Yes, please!
Coconut Milk Chicken
Ingredients:
4-6 chicken thighs or breasts
1 (14 oz) can coconut milk
1/2 cup water
1/4 cup soy sauce
3 Tablespoons brown sugar
2 cloves garlic, minced
1/2 teaspoon cumin
1/2 teaspoon onion powder
fresh ground pepper
Instructions:
In a bowl whisk together the coconut milk, water, soy sauce, brown sugar, garlic, cumin, onion powder and pepper.
Add the chicken to a crock pot and pour the milk mixture over them.
Turn the crock pot on and cook for 4-6 hours.
Chop up the chicken and serve.
This looks good! But I always have trouble with chicken breasts drying out in the crockpot. Does the coconut milk help to keep this moist?
