Coffee + Donuts Cupcakes

Coffee and donuts are best buds. They go together so well that it’s hard to imagine one without the other. There’s nothing I love more than a dessert within a dessert so I decided to make some flavorful coffee cupcakes and top them off with mini donuts! Everything is better in mini form, but if you want to skip a step you can always pick up pre-made mini donuts from the store.
The two make an adorable combo and the coffee flavor is everything you could hope for. Let’s just call this the ultimate breakfast dessert.
Coffee + Donuts Cupcakes
Ingredients:
Coffee Cupcake recipe:
1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
2 large eggs
1/2 teaspoon vanilla
1-1/3 cups all-purpose flour
3/4 teaspoons baking powder
pinch of salt
1/2 cup strong brewed coffee
1/8 cup milk
Coffee Frosting Ingredients:
1/2 cup (1 stick) unsalted butter, softened
3 cups powdered sugar
2-1/2 Tablespoons coffee
1 Tablespoon milk (as needed)
1/2 teaspoon vanilla
Instructions:
Preheat oven to 350 degrees. Prep a cupcake pan with liners.
In a bowl, whisk together flour, baking powder, and salt.
In the bowl of an electric mixer cream the butter and sugar. Add the eggs and vanilla.
Alternate the flour mixture with the coffee and milk, stirring until combined.
Pour batter into prepared pans. Bake for about 15-17 minutes depending on your oven. Let cool on a wire rack.
While the cupcakes are cooling, start the frosting. In the bowl of an electric mixer beat the butter, carefully adding the powdered sugar.
Add the coffee and vanilla and the milk as needed to get the right consistency. Turn the mixer up to high and beat well until light and fluffy.
Frost the cupcakes and top with mini donuts.

hi jenn! i had a question… you said 1 stick of butter for the cupcake… so is that actually a stick (which is half a cup) or a cup of butter? because for the frosting you used a cup of butter (but then wrote a stick next to it) or maybe im the only person who buys butter that is half a stick.. I DUNNO! but it would be great if you could get back to me on that! THANKS! and BTW I LOVE YOUR STUFF. you’re such a genius 🙂

Sorry, I didn’t realize how jacked up this recipe was! I will be more consistent with the stick no stick from now on. I’ve adjusted it, see above – and YES you are the only person who buys half sticks of butter! I WISH I could find half sticks! Awesome!

I bought two mini doughnut pans at the Wilton sale and I thought Coffee and Doughnuts cupcakes sounded like a cute idea… goggle them and I find you! =) Great minds think alike! I’m going to have to try something like this!
I just made these and I got 12 cupcakes out of the batter. This batter didn’t rise like I expected but that may end up being ok since I still have to ice them and put the donuts on. Very yummy batter.
