Coffee Milk cupcakes
I pretty much loved coffee flavored ANYTHING. So when I found these little boxed coffee milks at the Korean market I yelped with happiness! I just knew they’d be the perfect thing to make some delicious cupcakes with a hint of coffee flavor.
ingredients:
3/4 cup (1-1/2 sticks) butter
1-3/4 cups sugar
3 eggs
2-1/4 cups cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
pinch of kosher salt
1 cup COFFEE milk
1 teaspoon vanilla
Preheat the oven to 350 degrees. Prep cupcake pans with liners.
In a medium bowl whisk together the dry ingredients: cake flour, baking powder and salt. Set aside.
In the bowl of an electric mixer cream the butter and the sugar until combined. Add the eggs one at a time, and then the vanilla.
Alternate the dry ingredients with the coffee milk until the batter is nice and smooth.
Pour the batter into the lined prepped pans. (you should get 24 cupcakes)
Bake for 13-15 minutes depending on your oven, checking with a toothpick. Let cool on a wire rack.
Once the cupcakes are cooled, frost with mascarpone frosting and serve!
They look great! I will have to fidn some other milk though.. Was that flavor strong?
@Medeja Actually, the coffee flavor isn’t strong. It is much like a very sweet coffee with lots of milk. However, its not a subtle taste either. The coffee milk is quite unique.
@Medeja The coffee milk is very light but enough to give it a nice flavor.
I’ve been using this recipe for probably a year now, and all of my friends claim they’re the best vanilla cupcakes they’ve ever had. I just use my own frosting recipe.
