Coffee Spice Cake
Coffee is the love of my life. Its siren call sings to me and I run to it. Therefore I try to incorporate it into my baking so that I can get a coffee intake any way I can. The taste of coffee adds so much flavor to baked goods, you’ll wonder how you ever lived without it.
Bake this up for tea time, dessert, or breakfast. This spice cake is elevated by its coffee infusion because sometimes you just need a little pick me up in the morning.
Coffee Spice Cake
Ingredients:
1 cup hot water
2 teaspoons instant coffee
1 cup honey
3/4 cup sugar
1/2 cup vegetable oil
4 eggs
3 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cloves
1/2 tsp allspice
glaze ingredients:
2 teaspoons instant coffee
3 Tablespoons warm milk
1 cup powdered sugar
Instructions:
Preheat the oven to 325 degrees. Prep a bundt pan with melted butter or non-stick spray. Place on a baking sheet.
In a cup, stir together the hot water and instant coffee. Set aside.
In a bowl whisk the flour, baking powder, baking soda, cloves, allspice, and salt.
Make a well and add the honey, sugar, oil and eggs, stirring to combine.
Stir in the coffee mixture.
Pour batter into the prepped bundt pan. Bake for 60 minutes, or until the cake is cooked through. Let cool in the pan for two hours, then turn out onto a wire rack to continue cooling.
While the cake is cooling, start the coffee glaze. Mix the instant coffee and the warm milk. Add to the powdered sugar and stir until you get the right consistency for glaze.
Drizzle the glaze over the cake, to serve.
