Coke and Lime Ribs
It may sound crazy but cola and citrus compliment each other quite well. How else can you explain my love of Lemon Coke? The sweet and sour combination actually makes for a good marinade and when added to a crock pot, meat becomes fall off the bone tender.
These ribs get their flavor from a fragrant spice rub but the Coke and lime juice complete the savory sweet meal.
Coke and Lime Ribs
Ingredients:
1 rack of pork ribs
1 onion, sliced
3 Tablespoons brown sugar
2 teaspoons cumin
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon salt
freshly ground pepper
12 ounces of Coke
juice of one lime
Instructions:
In the crock pot lay out the sliced onions and place the rack of ribs on top.
In a small bowl mix together the brown sugar, cumin, garlic powder, onion powder, salt and pepper. Rub into the ribs.
Pour the Coke and the lime juice over the ribs and cook on low for 8 hours. Serve.
