Cookie Cupcakes
Cookies or cupcakes? Both are worthy desserts, but why argue when you can have both in one bite?
These cookie cupcakes have all the taste of a cookie with the tender crumb of a cupcake. The secret ingredient is Cinnamon Chips! They’re hard to find but worth the hunt.
I’ll admit, these are pretty addicting. When people eat them they inevitably ask for more. Not one more…like TWELVE MORE. This is why Chewbacca is keeping this one all for himself…
Cookie Cupcakes
Ingredients:
1-1/2 cups all-purpose flour
1 teaspoon baking powder
pinch of kosher salt
1 cup (2 sticks) butter
1/2 cup granulated sugar
1/2 cup brown sugar
3 eggs
1-1/2 teaspoons vanilla
1/3 cup whole milk
1 cup semi sweet chocolate chips
1/2 cup Hershey’s cinnamon chips
Instructions:
Step 1: Preheat the oven to 350 degrees. Prep a cupcake pan with liners.
Step 2:In a medium bowl whisk the flour, baking powder and salt. Set aside.
Step 3: In the bowl of an electric mixer beat the butter, sugar, and brown sugar.
Step 4:Once combined, add the eggs one at a time, then the vanilla.
Step 5: Alternate the flour mixture with the milk until combined.
Step 6: Fold in the chocolate chips and cinnamon chips.
Step 7: Fill the liners about 3/4 of the way full.
Step 8: Bake for 18 minutes, or until a toothpick test comes out clean. Let cool on a wire rack.

I bought a bag of those chips (@ Albertsons) just because I never see them, and saved them, wondering what to do with them. Now I know!!

What’s the difference between kosher salt and regular salt? And will it ruin the cupcakes if I just use regular salt?

I’m not a fan of regular salt (the one with iodine) but it’s up to you. I just put the ingredients down of the actual products that I use, regular salt is fine!

These are baking in my oven right now! I’m so excited. I didn’t think I’d be able to find any cinnamon chips today, but I liked the idea of them, so I sprinkled a bit of ground cinnamon into the dry mix. I’ll let you know how it turns out! Thanks for the recipe. :]

It’s like a regular cake. Moist and tender. Just don’t over bake it or it will harden.

Hi I was wondering if these tasted exactly the same as if they were cookies or does making them cupcakes make them more cakey/cupcake texture? I wanna try to make cupcake shaped & sized actual cookies with the same crunch and texture of cookies you know. Is that even possible like can I use my same chocolate chips cookie recipe and just put it into cupcake liners or will that not turn out right?
I absolutely love these!! I actually made these for the end of the year cupcakes in high school. (With caramel frosting) Everyone loved it! Just looking back at this recipe as I will be making them for my farewell party as I leave the state I’ve lived in for 10 years. Can’t think of a better cupcake to end it with. Thank you for the recipe!
