Sweet Cornbread Muffins
I’ve always loved cornbread, I remember my mom making it from the packaged Jiffy box mix with the old-fashioned label. The fluffiness of yellow squares, just waiting to be slathered with butter and honey was something I couldn’t wait to eat. Cornbread has a texture that is lighter than bread yet when sweet, could easily be mistaken for cake. That’s probably why I’m drawn to it.
Cornbread is the perfect accompaniment for hearty stews and chili. While it’s role is a side dish, it could easily be an entire meal in itself. Rather than a large pan to cut into squares, I made these into individual muffins. Easy to grab and go, Fresh out of the oven with butter and honey, there’s nothing better.
Sweet Cornbread Muffins
Ingredients:
1 cup all-purpose flour
1 cup yellow cornmeal
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup whole milk
1/3 cup vegetable oil
1 egg
1/2 teaspoon vanilla
Instructions:
Preheat oven to 350 degrees. Prep a muffin tin with liners.
In a bowl, whisk the flour, cornmeal, sugar, baking powder, and salt.
Make a well in the center of the dry ingredients and stir the milk, oil, egg, and vanilla until just combined.
Pour into the prepped liners.
Bake for 12-14 minutes, or until a toothpick comes out clean. Let cool on a wire rack.
Serve with butter and honey.
Mmmm…..yummy! I LOVE cornbread muffins–they are one of my favs. I’ll have to try out this recipe. I do have an amazing one as well, but it’s always fun to try out a new one.

From Dinosaur BBQ in my hometown of Syracuse, NY. I ususally use more honey than the recipe calls for and have never tried it as muffins but I bet they would be great.
