Crock Pot Chicken Long Rice

Chicken Long Rice is a Hawaii classicand aking it with a crock pot cuts down cooking time so you can set it and forget it. Normally served as a side dish, I can tell you on a cold day it’s just as good as a main meal. Especially if you feel a cold coming on, there’s nothing more comforting. Think of it as a thick Hawaiian Chicken Noodle Soup.

Crock Pot Chicken Long Rice

Ingredients:

2 (14 ounce) cans chicken broth
water, as needed
2 chicken breasts
2 single packages of long rice
1 small onion, sliced thin
4 green onions
two slices of ginger

Instructions:

Place the chicken breasts in the bottom of the pot along with the long rice bundles.

Top with the sliced onions and green onions, then nestle the ginger slices into the mix.

Pour the cans of chicken broth over the ingredients, then add enough water to cover the chicken and the noodles.

Cook on low for 8 hours or high for 4 hours.

Season with salt and pepper and serve.

    Long rice? According to māʻona.com, that’s also known as cellophane noodles — is this correct?

    Ooh I’ve been wanting chicken long rice for awhile now. I forgot about your crock pot rendition. I only with the boy would eat it!!! Is it soupy? I rather like it soupy, reminds me of the Pilipino dish called chicken sotanghon. I s’pose after it cooks in the crock pot i can add more broth huh? I think I’ll cut up a whole chicken and use the breasts for this and the rest of the chicken in your honey shoyu chicken. unfortunately i only hve 1 crock pot.

    what the hell is long rice? are they like rice noodles? wheat? can i use somen noodles?

    Do NOT use somen. Long rice that long dry white noodle in bundles in the pink netting. Super cheap, like 99cents for 6 bundles.

    @Lauren It depends on the portion. You can serve it as a main dish or a side. I’d say between 4 and 6.

    You can use frozen chicken breasts or thawed – if thawed it won’t take as long to cook.

    Local girl, looking for a crock pot recipe for chicken long rice… My boyfriend thought it taste pretty good. Couple things:

    Instead of canned stock and water, I substituted the entire liquid requirements with Minor’s Chicken Base. If you’ve ever been to Nieman Marcus’ restaurant Mariposa, this soup base tastes exactly like the demitasse chicken broth served right before your meal. Minor’s Chicken Base can be found in the refrigerated section of most gourmet food stores (I try to avoid using canned ingredients at all costs, Minor’s is a great substitute for this recipe).

    Aside substituting the canned stock with the Minor’s base, I followed the recipe exactly. Non-frozen chicken thighs were used and cooked for 2.25 hours on high.

    Next go around, I’ll make the following adjustments:

    Use twice the amount of ginger.

    Cook the chicken, ginger and white onion in chicken base for 1.5 hours on high.

    Then, add green onion and long rice and cook for another 45 minutes on high.

    Adding the noodles towards the end will prevent it from turning mushy; and the noodles will possibly keep it’s length instead of breaking apart due to over cooking.
