Deadpool cupcakes
It’s the wedding of the year, Deadpool is getting married! Didn’t get an invite? Impossible, everyone was invited! Everyone in the Marvel universe that is! Deadpool artist Scott Koblish drew the cover for Deadpool #27 and set a Guinness World Record at the same time for the most characters in a single issue’s cover, 236 comic book icons!
I went to a “wedding party” held at The Comic Bug to celebrate the release of the comic. Scott was on there to draw sketches and there was even an officiant on hand should anyone want to get married. No one took them up on the marriage thing but everyone was lined up for sketches! Scott was kind enough to draw me Deadpool holding a cupcake. Adorably deadly!
No wedding is complete without dessert so I made up some Deadpool logo cupcakes for all the fans at the celebration. A dark chocolate dessert even the Merc With The Mouth couldn’t resist!
Deadpool cupcakes
Ingredients:

24 chocolate covered cookies
red frosting
white frosting
cupcake ingredients:
3/4 cup (1-1/2 sticks) butter
1-3/4 cups sugar
3 eggs
1 teaspoon vanilla
2 cups cake flour
1/2 cup cocoa powder
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate milk
ganache ingredients:
6 ounces semi-sweet chocolate chips
2/3 cup heavy cream
1 teaspoon vanilla
Instructions:
To make the logos simply pipe the red frosting around the outside in a circle, and a thick line straight down the middle.
On each side of the center, use the white frosting and pipe the eyes in a half moon shape at an angle. Set these aside for later.
Preheat oven to 350 degrees. Prep a cupcake pan with liners.
In a medium bowl, whisk the flour, cocoa powder, baking powder, baking soda and salt. Set aside.
Cream the butter and sugar until fluffy. Add the eggs one at a time, then add the vanilla.
Alternately add the milk with the dry ingredients until combined.
Spoon the batter into prepped liners, bake 15-17 minutes depending on your oven. Let cool on a wire rack.
For the ganache, in a saucepan over low-medium heat add the chocolate chips, heavy cream and vanilla.
When it all begins to melt, start stirring. Keep on stirring until it magically turns into a glossy beautiful ganache. Let cool slightly.
Dip the cupcakes into the ganache and top with Deadpool logo cookies.
