Doctor Who Jammie Dodgers
This Saturday is the 50th Anniversary of Doctor Who! I love Doctor Who and the kids are well on their way to becoming Whovians as well.
While the Baby likes to create Doctor Who artwork, my favored medium is cookies! Tardis cookies, 11th Doctor cookies and those pesky Weeping Angel cookies too.
Everyone knows the Doctor’s favorite snack is the Jammie Dodger, the popular fruit filled biscuit. I knew I had to make my own version to celebrate this milestone in Doctor Who history! I found these impressive Doctor Who cookie stamps on etsy from Totalum. They make great impressions of the Doctor Who logo, however they’re cookies stamps, not cookie cutters. So I used a biscuit cutter to cut out the circles for the cookies.
I think saving the world through cookies is a perfectly believable storyline!
Doctor Who Jammie Dodgers
Ingredients:
1 cup (2 sticks) unsalted butter
1 cup sugar
2 eggs
2 teaspoons vanilla
3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Raspberry Jam
Instructions:
In a bowl whisk together the flour, baking powder and salt. Set aside.
In the bowl of an electric mixer cream the butter and the sugar. Add the eggs and vanilla.
Add the flour mixture until combined. When it pulls away from the sides of the bowl, the dough is ready.
Wrap up the dough in plastic wrap. Refrigerate until you are ready to use.
Preheat the oven to 350 degrees. Prep baking sheets with silpats.
Roll out the dough to about 3/8″ thick. Using a 2-1/4″ biscuit cutter, cut round shapes.
Use the cookies stamp to press into the center of the circles. Transfer onto the prepped baking sheets.
Bake for approx 10 minutes depending on your oven. Let cool on a wire rack.
Using an offset spatula, spread the raspberry jam onto the flat side of the circle cookies.
Top off with another cookie to complete the sandwich and serve.

Finally a recipe for jammy dodgers in cups, not grams! Haha thanks for this recepe and remember… bow ties are cool! By the way does the butter have to be room temp? Or should i use a pastry cutter while its cold?
