DOMO cookies
DOMO is my source of inspiration, from meatloaf, to cupcakes, to chocolate – so cut out cookies was the inevitable next step. Only I didn’t have a rectangular cutter! Woe is me.
What I do have is my handy dandy musubi maker. I use this thing for everything from actual musubis to sweet desserts like brownie or rice krispy musubi! It was the perfect DOMO-like shape.
chocolate cookie ingredients:
3 cups all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sugar
1 cup (2 sticks) butter
1 egg
red cookie dough
white frosting
chocolate pearls
In a bowl, whisk the flour, cocoa powder, baking soda, baking powder and salt. Set aside.
In the bowl of an electric mixer cream the butter and sugar. Add the egg until combined.
Slowly add the flour mixture, careful it will fly everywhere – until incorporated. Once the dough starts to pull away from the sides you know you’re done!
Put the dough in the fridge to chill. When you are ready to bake, preheat the oven to 350 degrees. Prep baking sheets with parchment or silpats.
Roll out the dough to about 1/4″ thick. Use the musubi maker as a guideline and cut out a rectangle shape.
In the center of the rectangle cut another smaller rectangle for the mouth.
Pull the dough out and fill it with the red dough, pressing into all the corners and making it smooth. The dough is pretty pliable so just keep adding a little at a time until it fills the small rectangle.
Transfer onto the silpat lined baking sheet and bake for 10 minutes.
When the cookies come out, press two chocolate pearls right above the red mouth for the eyes. Let cool on a wire rack.
Once the cookies are cool use a #3 piping tip and white frosting to pipe teeth inside the red mouth. Let the frosting harden and you’re done! A delicious cookie DOMO!
