Dumpling Soup
This is easy to throw together when you don’t have dinner planned. Adding frozen ingredients is quick and easy since it all boils down, and it makes prep a whole lot easier!
Ingredients:
3 cups water
2 cans chicken broth
3-4 slices of ginger
2 cloves of garlic, sliced
4 green onions sliced finely
1 cup shitake mushrooms – soaked and sliced
6-8 frozen gyoza/dumplings
1/2 cup frozen corn
1/2 cup frozen spinach
freshly ground pepper
To a large pot add the water, chicken stock, green onions, ginger and garlic. Bring to a boil.
While you are boiling the liquid, in a small bowl of water, soak the mushrooms until they are good and soft. Drain, rinse, and then slice them thinly, removing the stems. Put the mushrooms in the boiling liquid for about 5 minutes.
Add the corn and spinach and boil for a few more minutes. Putting them in frozen is just fine. Season to taste with the ground pepper.
Add the gyoza (again, frozen is no prob) and boil for a few minutes more until soft and heated through.
A super fast and tasty dinner!
