Espresso Chip Cookies
Chocolate and coffee, life’s two greatest combinations. Just don’t tell Peanut Butter and Jelly that. Chocolate makes espresso taste better and vice versa. The combination can heal your heart, lift your spirits and give you comfort.
I made this whole recipe by hand in a bowl, so no electric mixer necessary. However I will warn you, I made these mini which was a BAD idea. It just meant I ate about 10 times as many. Go for full size. Your heart will thank you.
Espresso Chip Cookies

1 cup sugar
2 eggs
1 Tablespoon coffee
1 cup chocolate chips
Instructions:
Preheat the oven to 350 degrees. Prep a baking sheet with a silpat or parchment.
In a medium bowl, whisk together flour, cocoa powder, espresso powder, baking soda, and salt. Set aside.
In another bowl combine the melted chocolate, butter, sugar and eggs. Add in the coffee. Add the flour mixture until combined, then stir in the chocolate chips.
For a smaller mini size, use a Size 100 disher for regular size use a large Tablespoon. Place the balls of dough on your prepped baking sheets.
Bake for 10-12 minutes depending on your oven, let cool on a wire rack.

Just started making mine. They smell so good. I can’t wait to taste them.
Yours look delicious.
Just bought some espresso powder at Williams Sonoma and wanted a recipe to make use of it! I did one cup of white sugar and a quarter cup of brown sugar to deepen the flavor. Mine,in an electric oven, were done at eight to nine minutes. Only had milk chocolate chips, yum! May try these with white chocolate chips and dried cranberries, thanks for the recipe!
I wanted to make some, but not so small. Would you have an approximate baking time? maybe 15-20 minutes? i dont really know :p. Also, are they soft, hard, or soft with a little crisp, etc?
@Jessica
Bake them longer, they will get crisper. But they have just enough bite with a soft chew. I would estimate 12-15 mins for a ‘normal’ sized cookie.
