Fresh Peach Chicken Sandwiches


Summer is about long, fun-filled days with family and for us it means a lot of time cooking and eating great food together. The kids love to get involved in the kitchen, which can be a real help when it comes to prepping at dinnertime. Not only do I encourage the kids to help with the cooking but also with the prep and shopping as well. Summer is the best time of year to visit a local farmer’s market, the weather’s great for strolling the aisles of beautiful and bountiful produce. Fresh Peach Chicken Sandwiches

Ingredients:

8 Tyson Fresh Chicken Boneless Skinless Chicken Breasts
2 peaches, diced and smashed with juice
2 cloves garlic, minced
2 Tablespoons brown sugar
1 slice of ginger
2 Tablespoons soy sauce
2 Tablespoons orange juice
1 Tablespoon lemon zest
salt and pepper
dinner rolls
1 peach, sliced

Instructions:

Pound the Tyson Fresh Chicken Boneless Skinless Chicken Breasts evenly flat, then add them to a freezer bag along with the smashed peaches and juice, minced garlic, brown sugar, ginger, soy sauce, orange juice and lemon zest. Marinate for 6-8 hours.

Take out the chicken and discard the marinade. Oil up a grill either an indoor or outdoor grill, then grill the chicken for 4 minutes, flip and grill for another 3 minutes when a thermometer inserted in the chicken reads 155 degrees or until no longer pink inside.

Let the chicken rest for 5 minutes, then slice and place on dinner rolls.

Top with sliced fresh peaches to serve. Note: Chicken must be cooked to an internal temperature of 170 degrees for boneless products and 180 degrees for bone in chicken products.
