Fresh Strawberry Cupcakes

Fresh strawberries right off the vine is one of life’s great pleasures. Sweet strawberries add a burst of color and flavor from savory dishes like salad to lovely breakfasts like strawberry pancakes.

When it comes to dessert, fresh strawberry cupcakes make the ideal end to the meal. So sweet and hearty, they don’t even need frosting!

Fresh Strawberry Cupcakes

Ingredients:

1/2 cup (1 stick) butter, softened
1 cup sugar
2 eggs
1-1/2 cups cake flour
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1/3 cup whole milk
1-1/2 teaspoons vanilla
1-1/2 cups fresh strawberries, chopped

Instructions:

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In the bowl of an electric mixer, cream the butter and sugar until fluffy. Add the eggs and the vanilla.

In a separate bowl whisk together the flour, baking powder and salt.

Add the dry ingredients to the butter mixture, alternating with the milk. Fold in the strawberries.

Fill cupcake cups 3/4 full and bake 15 minutes depending on your oven, until you get a clean toothpick. Let cool on a wire rack.

Serve as is or with a dusting of powdered sugar or frosting.

    Is there any particular reason for folding in the vanilla with the strawberries as opposed to stirring it in with the milk? Just curious!

    WOW!!!! These are terrific. I made these for my 1st graders Valentine’s day party and I actually had little ones in tears because I did not make enough. They wanted these instead of the candy. I used whip cream for the frosting however you really did not need anything. Thank You!

    these are yummy. but, they definitely were more muffiny than cupcakey. i too used a whip cream based frosting. it was delicious, but i was hoping it would be more like a cake!
