Fresh Tomato Pasta

There are flavors that stick with you when you first eat something memorable. Out with my mom for lunch, I decided to try this fresh pasta, and the flavors were so delicious I knew I had to try and recreate it for myself at home.

Fresh tomatoes, mixed with salty olives over pasta somehow seems like the ideal summer dish. The bright colors match the bright flavors, making this recipe as fun to eat as it is to look at. The fact that it all comes together quickly is a bonus, allowing you to savor dinner as well as time saved.

Fresh Tomato Pasta

Ingredients:

1 package spaghetti
2 Tablespoons olive oil
4 cloves garlic, minced
1 large shallot, diced
1-1/2 cups cherry tomatoes, sliced in half
1/4 cup green olives, drained
1 cup cooked spinach
salt and pepper

Instructions:

Cook the spaghetti according to package directions. Drain, do not rinse.

Add the olive oil to a pan over medium high heat, saute the garlic and shallot until softened.

Add the tomatoes, olives, and spinach. Season with salt and pepper and let simmer for 5 minutes. Add the cooked pasta, toss to serve.
