Fried Saimin
You know when you are looking in your pantry on a weekend and craving a little taste of Hawaii but not enough to cook a full blown luau, this will do.
You can add plenty of other things like egg or green onions, but fried saimin is best when you use what you have available. Add a side of Spam Musubi to make sure your Spam intake is covered. Quick and easy, it’s perfect island comfort food.
Fried Saimin
Ingredients:
2 cups water
2 packages saimin (I like S&S brand)
1 Tablespoon vegetable oil
1/2 cup spam
1/2 cup kamaboko
1 seasoning packet
2 Tablespoons water
Instructions:
Bring the water to a boil and add the saimin (don’t add the seasoning packets) but only boil the noodles for 2 minutes not the 3 mins as directed. You don’t want the noodles to get overly gummy. Drain but do not rinse, and set aside.
Cut the spam and kamaboko into matchstick sized pieces. In a skillet heat the vegetable oil and fry the spam and the kamaboko until heated through.
Add in the drained saimin noodles and stir to loosen. Sprinkle ONE of the seasoning packets on top (I don’t like mine that strong) and stir to mix together adding the Tablespoons of water as needed to loosen the noodles.
Once everything in heated through, serve.
I’ve never been to Hawaii, but I know enough to say that Spam Musubi next to the noodle bowl looks mighty tasty!
