Ginger Ale cupcakes
Second only to my love of root beer is my love of Ginger Ale. Bubbly, sweet and gingery – it’s versatile in cooking, adding sweetness and depth to both savory and sweet dishes.
Ginger Ale adds just the right subtle flavor to these fluffy cupcakes.
ingredients:
1/2 cup (1 stick) unsalted butter
1 cup brown sugar
2 eggs
1/2 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 cup Ginger Ale
Preheat the oven to 350 degrees and prep a cupcake pan with liners.
In a bowl whisk together the flour, baking powder, baking soda and salt. Set aside.
In the bowl of and electric mixer, cream the butter and brown sugar. Add the eggs and vanilla until combined.
Add the flour mixture alternating with the Ginger Ale – be careful, it’s foamy!
Once the mixture is combined spoon it into the prepped liners, filling about 2/3 full. You will get 12 cupcakes.
Bake for 15-17 minutes depending on your oven. Let cool on a wire rack.
When the cupcakes are cooled, try frosting them Whipped Cream Cheese frosting or Brown Sugar Whipped Cream, either go great with this cupcake!
