Gluten-Free Star Wars Waffles for International Waffle Day
Happy International Waffle Day! It’s hard to celebrate a food holiday when the world is on lockdown, especially when you can’t find the ingredients you normally need. Being stuck at home means home baking is taking off like fire but a lot of stores are out of flour. If you find yourself at the grocery store with only gluten-free flour on the shelf, don’t fret — it actually makes for a better waffle!
This is a variation on my moffles (mochi waffle) recipe. it used a combo of flour and mochiko, which is a pantry staple I always have on hand, and it adds an added crispness to the waffle that provides a satisfying crunch.
Having a good waffle maker by your side is also a necessity, and my Darth Vader Waffle Maker has never once failed me. Perfect Vaders every time.

Gluten-Free Star Wars Waffles for International Waffle Day
Ingredients:
1 cup gluten-free flour
1 cup mochiko
2 tablespoons sugar
3 teaspoon baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 cup milk
1/2 cup heavy cream
2 eggs
1 teaspoon vanilla
Instructions:
Step 1: Prep your waffle maker according to manufacturer’s directions.
Step 2: In a mixing bowl, stir together the gluten-free flour, mochiko, sugar, baking powder, cinnamon, and salt.
Step 3: Make a well in the center of the dry ingredients and add the milk, heavy cream, eggs, and vanilla. Stir together until just combined.
Step 4: Pour batter into the prepped waffle maker, and cook until golden brown.
