Greek Chicken Salad
It’s National Salad Month! I have to admit, anytime I see the words “Greek Salad” on a menu, I have to go for it. I love the flavor combination of salty olives and creamy feta cheese. I took those distinct flavors and added it to another fave of mine, chicken salad. This is nice twist on two classics, you can serve it as is or in a sandwich!
ingredients:
1 cup chicken, cooked and diced
1/4 cup mayonnaise
2 Tablespoons pickle relish
1 teaspoon yellow mustard
1/4 cup kalamata olives, sliced
1/4 cup cucumber, diced
1/4 cup celery, diced
1/4 cup feta cheese, crumbled
salt
pepper
toast
In a bowl combine the mayo, pickle relish and mustard.
Split the Kalamata olives in half to check for pits and so they’re easier to mix in.
Add the mayo mixture to the chicken along with the kalamata olives and cucumbers. Season with salt and pepper, then fold in the feta cheese.
Serve as is or place the chicken salad between two pieces of toasted bread.
