Greek Pasta Salad
I have always had a love of Greek Salad, it has to be the feta and the olives, two of my favorite things. Add little cheese filled purses of tortellini and you have a hearty side or a main dish, in an instant.
Salads like these are always a plus on a potluck table, they’re easy to scoop up and eat while you meander around the party.
Greek Pasta Salad
Ingredients:
1 (16 ounce) package tortellini
1 cup cucumber – cubed
1 cup crumbled feta cheese
1 cup pearl tomatoes
1 cup black olives
For the dressing
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1 tablespoon chopped fresh parsley
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
salt
freshly ground pepper
Instructions:
Bring a large pot of water to a boil. Add the tortellini, and cook according to the package directions. Drain, do not rinse.
In a small bowl, whisk the olive oil, lemon juice, red wine vinegar, parsley, oregano, and garlic. Season with salt and pepper.
In a large bowl, toss the tortellini with the dressing. Set aside.
Fold in the cubed cucumber, feta, tomatoes, and olives.
Refrigerate until ready to serve.
Sounds yummy! I’ll have to keep this in mind for next time I need a pasta salad.

Thanks for that. I moved away from Greece when I was really young, and I really want to rediscover my heritage. I’ve been trying out a lot of random greek recipes, and the best I’ve found yet is this greek recipe – it totally remind me of my childhood. I dont remember much of it except for the spicy smells and tasty food on every street.
