Green Chile Salsa

My mom made a dish similar to this that we’d eat it with chips, I’m pretty sure it was supposed to be an appetizer but somehow it would turn into a main dish. Once you have one bite you just can’t stop. I’ve changed the recipe up and added to it over the years but the key ingredient has always been flavorful green chiles.

Mixed together with tomatoes, olives corn and avocado, each ingredient compliments each other and you’ll find yourself wanting to get a little of everything in every bite. This Green Chile Salsa tastes especially good after it’s been chilled in the fridge for a few hours so that all the flavors can combine.

Green Chile Salsa

Green Chile Salsa

Ingredients:

2 tomatoes, seeded and diced small
1/2 cup corn
1 (4 oz) can chopped black olives
1 (4 oz) can chopped green chiles
1 avocado, diced SMALL
1 clove garlic, minced
squeeze of half a lime
2 teaspoons olive oil
2 teaspoons red wine vinegar
hot sauce
salt and pepper

Instructions:

In a bowl add the tomatoes, corn, olives, green chiles and avocado.

Toss with the garlic and lime juice.

In a small bowl whisk the olive oil and red wine vinegar and pour over the ingredients.

Season to taste with hot sauce and salt and pepper.

Serve immediately or chilled with tortilla chips.

    Yum. I’ve had similar things but I’ve never quite heard of this before.

    And yes, I’d probably just eat it as is, too. I’m going to have to make some of this soon.

    I made this to take to a 4th of July party. It was a huge hit! I served it cold with tortilla chips. Yum! This recipe is a keeper!
