Green Tea Ice Cream
Green Tea ice cream is polarizing because of the strong green color and taste but it’s one of my favorite desserts. Almost palette cleansing there something about the subtle sweetness that makes you keep wanting to come back for more.
Pure matcha powder is what give this color it’s distinctive tint. It’s a finely milled powdered green tea, that’s concentrated and full of flavor. It can be found in the tea aisle of any Japanese market or online and you’ll find it’s also useful in baking and cooking.
Making ice cream at home is easier than you’d think and doesn’t always involve cooking. Non-egg ice creams are quick and simple to make which can be dangerous in the summertime when ice cream consumption can jump to a daily habit. I’m talking about myself, here.
If you’re a fan of green tea, you’ll love the flavor of this simple ice cream.
Green Tea Ice Cream
Ingredients:
1/3 cup water
1/3 cup sugar
1 Tablespoon powdered green tea (matcha)
1 cup heavy cream
1 cup whole milk
Instructions:
Prep an ice cream maker freezer bowl ahead of time.
Cook the sugar and water over low heat, to make a simple syrup.
Remove from the heat and add 3 Tablespoons of syrup into a small bowl with the matcha powder, stirring well.
Pour the matcha mixture back into the simple and whisk well until thoroughly combined.
In a bowl, stir together the heavy cream, milk and matcha sugar mixture.
Cover and refrigerate for 15-20 minutes.
Stir again to make sure the ingredients are combined then pour the cold mixture into the prepped freezer bowl and freeze in an ice cream maker according to manufacturer’s directions.
When done, transfer to an airtight container and freeze until ready to serve.

You can get the containers at Surfas or Smart and Final. They are SOUP containers…

Glad someone asked about the cartons, but being from new england, I have no idea of any of those stores…have never heard of them!

I’ve made green tea ice cream, but I tweaked the recipe a bit-okay, a lot. I used a lot more sugar(I’m bad, don’t ask). I also added l/4 tsp salt and simmered a vanilla bean in the milk (l and 1/2 cups milk to 1/2 cup of heavy cream). Then right before I put the mix in the ice cream maker after I chilled it over night, I stirred in a cup of creme fraiche. I guess you could use plain old sour cream, but the creme fraiche adds a yummy rich taste and mellows out the green tea flavor a bit. I also used 3 tablespoons of matcha. We can’t stop eating this, trust me we’ve tried and failed. It’s too good. Tell me what you think if you try this adaptation. Later….. June
Thanks for this recipe…if I had known it was so simple to make, I would have tried it years ago. Now green tea ice cream doesn’t have to be this exotic thing that you can only get in Japanese restaurants here in Milwaukee. Actually, Whole Foods sells it now, and Asian Mart, but…I’m just happy to be able to make it at home whenever I feel like it!
