Guacamole Bacon Dogs
I’m normally not a fan of hot dogs but they were my Grandpa’s favorite food. We celebrated many a birthday for him with hot dogs and pie. Hey, the man knew what he liked. He passed away a few years ago and in an homage to him I decided to take his beloved hot dog and give it an update.
Here in LA, bacon wrapped hot dogs aka “Danger Dogs” are a big thing, so much so that they were illegal. I decided to go a bit lighter on the bacon and even it all out with LA’s other famous fave, avocado. Simple guacamole and a sprinkling of bacon takes this hot dog to new heights. Here’s to you, Grandpa.
Guacamole Bacon Dogs
Ingredients:
All-beef hot dogs
hot dog buns
bacon, cooked and chopped
simple guacamole ingredients:
3 avocados, quartered, seeded and peeled
2 roma tomatoes, diced
2 Tablespoons diced shallot
juice of half a lime
cayenne pepper, to taste
salt and pepper to taste
Instructions:
In a bowl mash the avocados, tomatoes, shallot and lime juice. Add the cayenne, salt and pepper to taste.
Cook the hot dogs over a grill and place them in a toasted bun. Top with guacamole and sprinkle with bacon.
