Guava Jelly Chicken

Guava Jelly is so versatile, you can use it as a spread for breakfast but it works just as well in savory foods. Check any local Hawaiian church cookbook and you’ll probably find a recipe for chicken made with guava jelly.

Most recipes call for frying the chicken, but who has time for that? Instead I marinate it in the sauce all day then bake it right before dinner. For an even faster more summery dish, try grilling it on the barbeque. This chicken is fragrant and flavorful and can be made with thighs for dinner or wings for a party!

Guava Jelly Chicken

Ingredients:

6-8 chicken thighs
1 jar (10 ounces) guava jelly
1/3 cup apple cider vinegar
1/3 cup soy sauce
1/4 cup brown sugar
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon pepper

Instructions:

In small bowl combine the jelly, cider vinegar, soy sauce, brown sugar, garlic, salt and pepper.

Place the chicken into a sealable container. Add the sauce ingredients and marinate for 4-6 hours.

Preheat the oven to 425 degrees. Prep a baking pan with non-stick foil.

Place the chicken skin side down and bake for 25 minutes. Turn the chicken over and bake for another 20 minutes. When the chicken is no longer pink and the juices run clear, it’s ready to serve.

    my MIL uses any kind of jam, plum, strawberry (especially the packets from mcdonald’s because none of her old lady friends use them and she can’t bear to throw them away) –to marinate chicken and they’re delicious too. gotta try the guava though.
