Hawaiian Garlic Fried Chicken

Why is it Hawaiian? No reason except that every Hawaiian church cookbook known to man seems to have their own variation. I chose to serve mine in tiny bite sized chunks much like mochiko chicken. Savory and irresistable, the kids love this in summer with a side of rice.
Hawaiian Garlic Fried Chicken
Ingredients:
dipping sauce ingredients:
1/2 cup soy sauce
1/2 cup sugar
1/3 cup water
1 clove garlic, minced
1 slice ginger, minced
fried chicken ingredients:
2 pounds chicken, cut into bite sized chunks
3/4 cup all-purpose flour
3/4 cup panko
2-1/2 Tablespoons garlic salt
1/4 teaspoon pepper
oil for frying
Instructions:
In a small bowl whisk together the soy sauce, sugar, water, minced garlic and minced ginger until combined. Set aside.
Heat the oil in a skillet over medium high, heat approximately 1″ deep.
In a freezer bag, combine the flour, panko, garlic salt and pepper. Shake to combine. Place the chicken in the bag and shake to coat.
Shake off the excess flour mixture and fry the chicken in the hot oil until browned and cooked through. Let drain on a wire rack.
Once all the pieces are cooked quickly immerse them in the dipping sauce, take them out and serve.

frying newbie here. i’m so gonna make this tonight, but what do i do with the oil once i’m done frying?
@camille I usually pour the oil into an empty old glass jar, don’t throw it down the sink!!!
Made this recipe last night and wow amazing taste , the dipping sauce is sooo tasty , love the taste of ginger in that sauce. great easy dish to make !

Hey, the chicken tastes great even before dipping! I saved some plain ones for my son to take to the sitter today–his first day back since summer ended, so I want to give him a nice lunch that he will eat. I’ll make him rice with furikake to go with it. My mom, visiting from Hawaii, couldn’t stop going, “mmmmmmm….” for the longest time.
