Hello Kitty 3D cookies
I am a collector of Hello Kitty food related items. I’m always on the hunt for new things and a reader was nice enough to send me something I’ve been eyeing for quite a while…
…a stand up cookie cutter! I love making things in three dimension, it’s all those years of architecture school having to build models. Except I build edible buildings now. Huh.
You don’t have to go over the top with decorating, just a few simple facial features is good enough since Hello Kitty is so recognizable!
ingredients:
3 cups flour
1 teaspoon baking powder
pinch of salt
1 teaspoon vanilla
1 cup (2 sticks) butter, softened
1 cup sugar
1 egg
black, yellow, red and blue royal icing
In a medium bowl whisk together the flour, baking powder and salt.
In the bowl of an electric mixer beat the butter and sugar until combined. Add the vanilla and the egg.
Slowly add in the flour mixture until it is incorporated. The dough will form quickly, and when it starts to pull away from the bowl, it’s done!
Split the dough into two and wrap in plastic wrap. Chill until you are ready to use.
Preheat your oven to 350 degrees. Prep baking sheets with silpats.
Start rolling out the dough. I use powdered sugar instead of flour so it doesn’t get that dough-y taste and the sugar adds a slight sweetness. Roll the dough to about 1/4 inch thick and cut out the cookies. These have a body and two legs for standing.
Place them on the silpat sheets and bake for 8-10 minutes depending on your oven. Let cool on a wire rack.
Using different colored royal icing I decided to just pipe in the important parts of the cookie. There’s no reason to do the whole thing if you don’t have to, Hello Kitty’s features speak for themselves.
Now the regular way to use these cookies is to stand them up, but you can also forget the ‘legs’ totally and just press the cookie into a cupcake. It looks just like she’s popping out to say hi! Cookies in a cupcake, the best dessert ever – Hello Kitty style!
