Hello Kitty Star Wars: Hello Kitty Jedi Cookies
Of all the things that make me the most happy, Hello Kitty and Star Wars are right up there. A friend was having a Hello Kitty Star Wars birthday party for her kids and since I know both of those things quite well, I jumped at the chance to create something unique when it came to desserts.
Little plastic lightsabers help these cookies combine the cuteness of Hello Kitty with the trained focus of a master Jedi. Hello Kitty is ready for action!
These sweet cookies can be made as regular sugar cookies or vegan however you feel the Force wills it.

Hello Kitty Star Wars: Hello Kitty Jedi Cookies
Ingredients:

3 cups all-purpose flour
1/2 teaspoon baking powder
pinch of salt
1 cup (2 sticks) unsalted butter
1 cup sugar
1 egg
2 teaspoons vanilla
you’ll need:
Hello Kitty cookie cutter
black icing
yellow icing
red icing
large red heart sprinkles
plastic lightsaber toppers
Instructions:
In a bowl whisk together the flour, baking powder, and salt. Set aside.
In the bowl of an electric mixer, cream the butter and sugar. Add the egg and vanilla until combined.
Add the flour mixture until combined. When it pulls away from the sides of the bowl, the dough is ready.
Wrap up the dough in plastic wrap. Refrigerate until you are ready to use.
Preheat the oven to 350 degrees. Prep baking sheets with silpats or parchment.
Roll out the dough to 3/8-inch thick and use the Hello Kitty cookie cutter to cut out shapes.
Cut out an equal amount of just Hello Kitty’s hands and place them on a separate cookie sheet.
Place the cookies on the prepped cookie sheets. For the whole cookie, bake for 10 minutes, and let cool on a wire rack. For just the hands, bake for 6-7 minutes depending on your oven.
When the cookies are cool, use a #4 tip and black icing to pipe her eyes, a #4 tip and yellow icing to make her nose. Add whiskers with a #2 tip and more black icing.
Using a #5 tip and red icing, add the two sides of the bow on the right corner of Hello Kitty’s head. Use the icing to place a jumbo heart sprinkle in the middle to complete the bow.
With white icing and a #7 tip, secure the plastic lightsaber into her hand area, placing the small cookie hand on top, securing it with more icing to hold it into place.
Once the icing is dry the cookies are ready to serve.
