A giant box landed on my doorstep – I was hoping that Oprah finally decided we were bff’s and sent me a box of ‘favorite things’…turns out that was NOT the case. Still, it was just as good

Kraft/Cool Whip sent me a lovely HUGE gift basket filled with fantastic things!

It was large and pretty and I couldn’t wait to unwrap it. Only once I started taking it apart did I notice it was FULL of amazing baking items.

Not only were there ingredients like chocolate, caramel bits, jell-o pudding and sugar – but the kicker was a gorgeous Williams Sonoma goldtouch muffin pan. I am a huge fan of this pan – it makes perfect cupcakes every time! Also included were a Williams Sonoma spatula and striped towels! Now that is a basket truly aiming for a baker’s heart!

Personally, I went straight to work and used the items to make my take on an old Hawaii potluck standard – Chocolate Macadamia Icebox Pie (recipe, here).

    Right now I’m planning to make up three kinds of marshmallows (vanilla, cinnamon, and peppermint) and dip them in chocolate, make some peppermint bark (cause I’m addicted to the stuff and Ghiradelli is my fave but not in the budget the way I eat it), and probably some fudge. Oh and maybe a pecan pie. Mmmm…. And maybe some lemon cupcakes, if I can get my mom to ship me some Meyer lemons from her yard. (Since I can’t get them here. Why did I move from Texas to Minnesota? *sigh*)

The okinawan sweet poatato will be light and whipped and of course nothing but fresh/frozen pure 100% coconut milk! hmm no packaged haupia!

    I’m making peppermint gingerbread cookies. ^^ You mash up candy canes (but not into powder, just into small bits), knead them into gingerbread, and bake! The melted candy cane bits make it sweet, minty, and a bit chewy, and it looks gorgeous. I always use a reindeer cookie cutter for it, too! A friend is going to make a gluten-free version and let me know how it goes.

    instead of cookies, i’m going to make red velvet and coconut cupcakes to give away for christmas. but for the family, i am attempting to make momofuku’s crack pie… i’ve been waiting for an occassion to make this, and seeing that we will be with family for 2 days straight, crack sounds like a good idea! πŸ™‚ happy holidays, jenn!

    Really, what WON’T I be making for holiday desserts this year?!? I decided to make special treats for Christmas gifts and then there’s my husband’s birthday just days before the holiday (did I mention he HATES cake?)…

    ANYWAY, I’m making tons o’ candy (truffles, bourbon balls, fudge, polvoron and *maybe* peanut brittle), cookies (pumpkin oatmeal, sparkled ginger and Mexican hot chocolate snickerdoodles) and a peanut butter and chocolate icebox cake to celebrate my husband’s birthday.

    the children and I will definitely make some crumbles using the fruit we still have in the freezer, apple, pear and of course rhubarb. But we will also be experimenting with all things chocolate as this year it has been decided that the traditional Christmas cake and pudding are out and chocolate is most definitely in!!
