Honeycomb Snack Mix
Cereal is for more than just breakfast, sometimes it’s so good it can be a snack by itself. And with a little extra bit of love, you can create a nice mix to give away as gifts or put out at a party.
This mix combines some of my favorite things: sweet Honeycomb cereal, dried cranberries, and crunchy pistachios, plus a mix of savory and sweet popcorn. Toss it all with melted brown sugar, butter, and honey (a spectacular triumvirate) and you have yourself a stunning snack mix you won’t be able to put down.
Bag it up or scoop it into Mason jars for a lovely presentation, or just keep it all to yourself and eat it by the handful.
Honeycomb Snack Mix
Ingredients:
1/2 cup brown sugar
4 tablespoons (1/2 stick) unsalted butter, melted
1/4 cup honey
2 cups Honeycomb cereal
1/2 cup cranberries
1/2 cup shelled pistachios
1 cup caramel popcorn
1 cup cheese popcorn
Instructions:
Preheat oven to 200 degrees. Line a baking sheet with silpats or parchment.
In a small bowl stir together the brown sugar, melted butter, and honey.
Toss the Honeycomb cereal, cranberries, and pistachios together with the butter mixture, then spread onto the baking sheet.
Bake for 1 hour, stirring every 15 minutes.
Take the pan out of the oven and toss the mixture with the caramel and cheese popcorn.
Let the mixture cool completely before serving.
The recipe says CRUNCHY cranberries. Should the cranberries be fresh or dried before baking?
