Karate Cookie Cupcakes

My kids aren’t too into team sports so I’m not really on the soccer mom/basketball/baseball/football mom bandwagon but the one activity they’ve been doing for years is karate. It gives them a lot of focus and discipline and helps with their studies as well.

I repurposed my ninja cookie cutters by adding details to turn the cookies into little karate boys. Placing them onto cupcakes made great toppers and also gave them just the balance they need to stand up, then I customized them by adding each kid’s belt color. The kids felt like they were getting their own little edible trophy!

ingredients:
3 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) butter
1 cup sugar
1 egg
2 teaspoons vanilla

black frosting
colored frosting
frosted cupcakes

In a bowl whisk together the flour, baking powder and salt. Set aside.

In the bowl of an electric mixer cream the butter and the sugar. Add the egg and vanilla.

Add the flour mixture until combined. When it pulls away from the sides of the bowl, the dough is ready.

Wrap up the dough in plastic wrap. Refrigerate until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with silpats.

Roll out the dough and use the Ninja cookie cutters to cut out the shapes.

Place the cookies on the prepped cookie sheets.

Bake for 10 minutes, let cool on a wire rack.

Using a #3 tip and black frosting, pipe the eyes and hair. Add lines for the folds of the gi.

Again using a #3 tip, pipe the different colored belts.

Place the finished cookies onto frosted cupcakes and serve!
