Korean Cucumber Banchan Side Dish
When I eat Korean BBQ it’s not the meat I go for, it’s the sides. The array of side dishes called banchan can be simple or plentiful depending on where you go. I love them all and enjoy peeking into every bowl like tiny presents scattered among the table.
One of my favorites is the spicy cucumber, called Oi Muchim. I often horde it for myself so that no one gets any, that’s an FYI should we ever eat together.
This dish is easy to put together at home and makes for a spicy, fresh side dish at any meal.
Korean Cucumber Banchan Side Dish
Ingredients:
1 English cucumber
1 teaspoon vinegar
1-1-/2 teaspoons sesame oil
1 teaspoon sugar
1 Tablespoon Korean hot pepper flakes (gochugaru)
Instructions:
Slice the cucumber and place into a bowl.
Toss with vinegar, sesame oil, sugar and hot pepper flakes.
Keep refrigerated in an airtight container until ready to serve.
