Layered Shrimp Salad
May is Salad Month. Who knew there was a Salad Month? I served this shrimp salad my New Year’s Day party. The layering makes it look beautiful on a party buffet table!
ingredients:
1 cup lettuce, chopped
3 roma tomatoes, diced
2 avocados, diced
juice of half a lime
1/2 cup red onion, diced
1 cup corn
1 cucumber, diced
2 cups medium shrimp, cooked, peeled and deveined
This salad is all about layering. Get a nice large trifle bowl and place the lettuce on the bottom, adding the layer of tomatoes on top of that.
Toss the avocados with the lime juice and add that on top of the tomatoes. Add a layer of diced red onion, followed by the corn and diced cucumber. Finally add the shrimp on the very top of the salad.
Add dressing on the side and you have a gorgeous layered salad for your party!
